Stopping microbial growth is extremely important in many products ranging from foods to cosmetics to toiletries. Nature also needs antimicrobials, so plants can generate natural chemicals that are effective for inhibiting microbial growth. Unfortunately, extraction of these natural chemicals from plants can be difficult and expensive. We are using knowledge of chemical structures from natural antimicrobials to direct the discovery of new antimicrobial molecules from biobased feedstocks.
